Principles of Nutrition
Description
This course introduces the principles of nutrition as it relates to health and well-being throughout the life cycle. Students will identify essential nutrients and their contribution to good health. In addition to, students will apply nutrition knowledge to healthy menu planning with attention to dietary modification for special diets. Topics covered include an examination of primary nutrients, specialty diets, nutrition labeling, and health claims, culturally diverse eating patterns, and nutritional needs throughout the life cycle as recommended by dietary guidelines of Health Canada. It is designed to promote an awareness of and an introduction to the fundamentals of nutrition for culinary professionals.
